• 100g diced bacon

  • ½ brown onion

  • ½ capsicum

  • 1 tbsp olive oil

  • 2 ½ cups self-rising flour (300g)

  • 125g cooled melted butter

  • 1 pinch of salt and pepper

  • 100g parmesan cheese

  • 250ml water

  • 60g WellboostTM CarePlus Neutral

  • 2 eggs

  • 40g grated cheese



  1. Preheat oven to 200°C (fan forced).
  2. Fry onion, bacon and capsicum until onion is just soft.
  3. Sift flour into bowl, add the parmesan, salt and pepper.
  4. In a separate bowl whisk eggs, water and WellBoostTM CarePlus Neutral until combined.
  5. Make a well in the flour and add the milk mixture and the butter, fold until combined.
  6. Fold in the bacon mixture.
  7. Spoon into a greased muffin tray, top with grated cheese and cook for 20-25 minutes or until the muffin tops are golden brown.


Tip: Add extra cheese to top if desired
