INGREDIENTS (Serves 3)

100g diced bacon

½ brown onion

½ capsicum

1 tbsp olive oil

2 ½ cups self-rising flour (300g)

125g cooled melted butter

1 pinch of salt and pepper

100g parmesan cheese

250ml water
-
60g WellboostTM CarePlus Neutral

2 eggs
-
40g grated cheese
DIRECTIONS
- Preheat oven to 200°C (fan forced).
- Fry onion, bacon and capsicum until onion is just soft.
- Sift flour into bowl, add the parmesan, salt and pepper.
- In a separate bowl whisk eggs, water and WellBoostTM CarePlus Neutral until combined.
- Make a well in the flour and add the milk mixture and the butter, fold until combined.
- Fold in the bacon mixture.
- Spoon into a greased muffin tray, top with grated cheese and cook for 20-25 minutes or until the muffin tops are golden brown.
Tip: Add extra cheese to top if desired
